BARS MANAGER 

Location : Dolmen Resort Hotel & Spa
Position:    Bars Manager


Will be responsible to plan, direct and oversee all bars’ operations.The Bars Manager will also assume responsibility for managing staff, ensuring product and service standards are met and implementing and maintaining procedures for maximum operating efficiency.

Other duties include: 

  • Delegate duties and tasks to staff to meet objectives and maximize resources.
  • Direct and manage staff members to meet standards and objectives and ensure staff operate within company policies.
  • Organize and adjust staff rotas and schedules
  • Oversee the preparation and presentation of beverages to meet set standards.
  • Resolve customer complaints promptly.
  • Monitor cleanliness and hygiene of bars area.
  • Ensure adherence to cash management and stock control procedures; monitor and order supplies.
  • Make certain all deliveries are checked in correctly and documentation is correct.



The successful candidate must possess the following attributes to be shortlisted for this role:

  • A minimum of 2 years’ experience in similar role, preferably in a four or five star hotel.
  • Strong financial acumen and able to work within budgets and costs. 
  • Proven ability to manage and motivate a team.
  • Excellent communication skills, both verbal and written.

Position: Bartender

Tumas Group is accepting applications for Bartenders to join one of its subsidiaries involved in the entertainment industry. 

The essential duties include:

  • Prepare beverages as requested by clients;
  • Interact with customers, take orders and serve drinks;
  • Restock and replenish bar inventory and supplies;
  • Keep the bar area clean at all times.

Position – Assistant Pastry Chef

A vacancy for the position of Assistant Pastry Chef has arisen within Dolmen Hotel Resort & Spa.

Reporting to the Duty Pastry Chef and Senior Chefs, the selected candidate will be involved in the day to day preparation of desserts as well as decorating and baking goods according to existing menus and daily business.

 Other duties include:

  • Maintaining daily orders and requisitions, aware of Food Cost limits and reducing wastage.
  • Maintaining expected levels of standards and quality of service.
  • Preparing foods towards brasserie menus, plated functions, weddings and serving on buffets.
  • Keeping the kitchen and work areas clean and organized. Required experience and skills:
  • Previous experience in a pastry kitchen of a four or five star hotel. - A certification from ITS on Food Preparation & Production or equivalent.
  • A valid food handling certification from a recognized institution.
  • An understanding of Health and Safety in the workplace and HAACP measures used throughout the Kitchen and Pastry
  • Attention to detail and good personal standards
  • A good knowledge and idea of up to date fashions and trends of pastry services within hotels and restaurants
  • Excellent communication skills, both verbal and written, in Maltese and English.

We are looking for an outgoing individual with previous work experience in a restaurant environment.  The ideal candidate should have a pleasant personality, excellent communication skills and enjoys interacting with guests and customers.  Previous experience within a four/five star environment will be considered an asset.

  • Good communication skills including fluency in English and preferably in other languages
  • Relevant work experience in a similar role

Position – Commis Chefs

We are currently seeking to recruit passionate Commis Chefs who will support the Chef de Partie or Demi Chef de Partie in the daily food preparation in order to meet the set standard and quality levels.

  • In possession of City & Guilds 706/1 or a Diploma/Certificate in Food Preparation & Production

Position – Demi Chef de Partie

The selected candidates will be responsible for all members of staff of the section including 1st. Commis and 2nd. Commis Chefs and Apprentices, as well as to provide the agreed standard of food service during all working hours, ensuring that all food production and operation adheres to specified food cost percentage and food hygiene policy.  Leadership skills coupled with sound communication skills are essential for this position.  Applicants should be in possession of City & Guilds 706/1 & 706/2 together with a minimum of one year experience within a Four / Five-Star Hotel or Restaurant / Outlet.

Position - Full Time & Part Time Online Dealers

 

We are looking for smart and highly motivated individuals to join our team as Online Dealers.

 This role requires energetic and positive individuals, who enjoy working in a dynamic environment. Successful candidates must possess an excellent command of English and previous experience in a similar job.

 The Online Dealers will be responsible to operate live table games, whilst ensuring that all processes are carried in accordance with the Procedures Manual and the Gaming Regulations.

Other duties include:

 • Ensuring proper set up and functioning of on-line equipment.

• Checking of cash chip float and decks of cards before commencing a gaming.

• Maintaining pre-set time interval between games.

• Providing commentary on all transactions.

• Maintaining the highest possible standard of customer relations.

 

 

 

Skills & Knowledge

 To be successful in this role, you must have a good command of English and preferably Italian.

 The ideal candidate must possess an A level in Accounts and as a minimum, 2 years’ of previous work experience in a similar post. He/she needs to be highly organized, a good team player and also demonstrate the ability to work at his/her own initiative.
